Vegan Diner Shakes
Base Flavour Variation – Creamy Vanilla
2 cups unsweetened vanilla or plain almond milk
(or any other dairy-free milk of choice such as coconut – for more coconut power! – or rice milk)
½ cup coconut butter*
4-6 dates (depending on desired sweetness), pitted
2 teaspoons vanilla extract (can be omitted if using vanilla almond milk)
Blend all of the ingredients at high speed for 30-60 seconds. Pour out and enjoy!
* Coconut butter (which is like a nut butter) is made by grinding up the coconut flesh. This can be substituted with 1/2 cup shredded unsweetened coconut and 1-2 tbsp coconut oil.
Other Flavour Variations
Dreamy Chocolate – add 2 tablespoons of unsweetened cocoa powder
Island Strawberry – add 4-5 fresh or frozen strawberries
Mint-Chocolate –add 2 tablespoons of unsweetened cocoa powder and ½-1 teaspoon of peppermint extract
Pina Colada – add ½ banana and ½ cup fresh or frozen pineapple
Caribe Fruit Punch – add ½ – 1 kiwi, some pomegranate seeds, and ½ cup fresh or frozen mangos
