The Hydration Sensation

Being an extremely high-water content and anti-oxidant-rich fruit, using watermelon in this salad, along with cucumbers, yields a super hydrating and low calorie accompaniment to any protein-rich meal, any time of year!


The Hydration Sensation

  • Watercress, arugula or mustard greens (as a bed for the ingredients below)
  • 2 cups watermelon, cubed
  • 1 cup cucumbers, cubed
  • 1 green jalapeño pepper, seeded and minced
  • A generous handful of fresh cilantro, chopped
  • Top with sheep feta cheese and cracked black pepper


  • One part extra-virgin olive oil (one tablespoon)
  • Two parts lime juice (two tablespoons)
  • Pinch of sea salt and black pepper
