Nothing tastes more like summer than fresh basil pesto. I made a huge batch and am enjoying this gem in so many ways. No longer confined to being a pasta topping, pesto can liven up any dish and seriously amp up the nutrition levels. Try as a topping for fish or chicken, dip for veggies, a sandwich spread or even alongside scrambled eggs.
