These patties, made golden by lightly sautéing them in extra-virgin olive oil, are perfect on their own, atop a fresh salad or dressed up as an easy burger.
Salmon & Quinoa Patties
- 1 can wild salmon
- 2 eggs
- 1 cup cooked quinoa
- 2 tablespoons chopped red onion
- 1/2 teaspoon sea salt
- 1/2 teaspoon of your favourite seasonings such as herbs du provence, chipotle powder, dried oregano, black pepper (optional)
- 3-4 tablespoons extra-virgin olive oil
In a medium bowl beat the eggs. Add the remaining ingredients and mix well. Divide into four portions. Scoop out a portion and shape into a ball, press down to create a burger shape. Heat the oil on medium and cook patties until golden brown on either side.
