Quinoa with Persimmons & Swiss Chard

A perfect side to something spicy like jerk chicken or chipotle shrimp, or on its own as a hearty vegan dish…Quinoa with Persimmons and Swiss Chard. Nourishing, sweet and the almonds add a pleasant crunch! This dish is packed with nutrients from the greens, turmeric, healthy fats and of course the persimmon - an exotic East Asian fruit whose flesh is sweet as honey and loaded with vitamins. The sweetness and density of this dish complements your favourite grilled, roasted or barbequed meat or fish, especially something with a little heat! But on its own it provides excellent quality vegan protein from the quinoa and nuts.

Quinoa with Persimmons and Swiss Chard.

Serves 2.

  • 2 tablespoons virgin coconut oil
  • 1 green onion, chopped
  • 2 cups chopped Swiss chard (or other greens like kale, collards or spinach)
  • 1/2 cup quinoa, rinsed
  • 1 cup plain water
  • 1/8 teaspoon turmeric
  • 1/4-1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 very ripe persimmon, diced
  • 1/4 cup sliced almonds (or other nuts like pine nuts, crushed walnuts, pistachios)

Heat the oil in a medium pot, over medium heat, and sauté the green onions for 1-2 minutes. Add the Swiss chard (or other greens) and cook for another 2-3 minutes until slightly wilted, stirring occasionally. Add in the rinsed quinoa, water, turmeric, salt (begin by adding 1/4 teaspoon and add more as needed). Turn the heat to low and cook covered for 10-15 minutes until quinoa is translucent, tender and cooked through. Remove from the heat, add in the persimmons, sliced almonds and toss. Season with additional salt, if needed, and pepper. Serve and enjoy!
