Most quick breakfasts include refined starches, lots of sugar and preservatives - cereals, bagels, muffins – a sure way to leave us crashing later in the day, starved of nutrients, craving sweets and binging on unwanted calories. Here’s a recipe that does none of that! Simple to make, these grain-free muffins are soft and delightfully nourishing, sweetened with unrefined maple syrup and spiked with the warming aroma and flavour of cinnamon. Using coconut flour instead of wheat flour not only makes these healthy treats gluten-free, but it supplies them with fibre and healthy fats keeping cravings at bay and binges away.
Quick Apple Breakfast Muffins (paleo!)
Makes 10 muffins.
- 2 large apples, grated and strained
- 2 tablespoons maple syrup
- 4 eggs
- 1/2 cup coconut flour
- 1 tsp baking soda
- 2 tsp cinnamon
Preheat the oven to 350 degrees F.
In a medium-sized mixing bowl, combine the grated apples, eggs and maple syrup. Stir in the remaining ingredients. Pour the batter into 10 baking cups and bake for 22 min or until a toothpick, when inserted, comes out dry.
