Slow Cooker Pulled Pork

Pulled pork meets its clean eating match! Lean pork loin and a homemade BBQ sauce makes this typically unhealthy dish a nutritional and flavour winner. Using a leaner cut of pork makes this healthier without compromising taste as the slow cooker process, and bold flavours from the BBQ sauce deliver maximum flavour. Using a homemade BBQ sauce brings this dish up several nutritional notches as quality ingredients and healthier swaps can be used than store-bought variations which are normally loaded with refined sugars, artificial flavours and MSG. We love eating this on lettuce wraps topped with a spicy avocado cream – flavourful, comforting and healthy!

Slow Cooker Pulled Pork

Serves 2-4

  • 1  pork loin (about 1 pound)
BBQ sauce
  • 1 cup tomato purée
  • 1/3 cup balsamic vinegar
  • 3 tablespoons raw honey
  • 1 tablespoon low-sodium soy sauce (or tamari sauce), preferably organic or non-GMO
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon unsweetened cocoa powder

Turn slow cooker on high and add BBQ ingredients. Add the pork loin and let it heat up for about 30 minutes. Turn the heat down to low and let cook for 4-6 hours. Remove pork loin, shred the meat and add it back into slow cooker and toss in BBQ sauce. Try serving in lettuce wraps and topped with spicy avocado cream.
