Persimmon Salsa

‘Tis the season for persimmons! A delicacy from East Asia, the persimmon, when completely ripe, has a sweet-as-honey, creamy soft flesh. This delicate fruit contains both vitamins A and C, is loaded with fibre and has several other health-promoting nutrients to help us optimize our health. It can be enjoyed raw on its own, in smoothies (I’ve been loving the extra creaminess and sweetness they add to my morning smoothies!) and adds a sweet touch to this fresh salsa. We love this salsa alongside, or topped on, grilled seafood, chicken or whole grains like quinoa.

 

Persimmon Salsa

Makes 2-4 servings.

  • 1 very ripe persimmon, chopped into bite-sized cubes
  • 2 tablespoons finely chopped red onion
  • 1/2 green onion, finely sliced
  • 1/3 cup chopped cucumber
  • 1/2 avocado, chopped into small cubes
  • The juice of 1 medium-sized lemon
  • Pinch of sea salt
  • 1/4 teaspoon freshly ground pepper

Gently mix everything, by hand, in a bowl and serve immediately.
