PB & J Brownie Cups (flourless!)

Peanut butter and jam meet chocolate brownies! Here’s a treat that is lower in sugar, completely flourless, dairy-free and gluten-free, but every bit as decadent!  Because they’re made with black beans, these sweet treats are also a great way to get more fibre and protein into your diet. A ‘health’ food never tasted so good!

 
 
 

PB & J Brownie Cups (flourless!)

  • 2 cups/16oz can of black beans, rinsed (canned is great to use, just try to opt for a low or no sodium variety)
  • 3 eggs
  • 1/2 cup cane sugar
  • 1/4 cup pure cocoa powder, unsweetened
  • 1 teaspoon baking powder
  • 1 tablespoon pure vanilla extract
  • Approx 1/2 cup natural peanut butter for filling (ensure there are no added sugars, salt, oils or additives)
  • 12 strawberry slices

Preheat oven to 350 degrees F.

Combine beans, coconut oil and eggs in a blender or food processor for 1 minute until smooth. Add the remaining ingredients (except peanut butter and strawberries) and blend for another 1 minute. Fill 12 silicone muffin cups (or parchment muffin tin liners) halfway and top each with 1-2 teaspoons of natural peanut butter and a slice of strawberry.  Top each cup with a tablespoon of brownie batter.  Bake for 15 minute. Let these cool fully before taking them out of the muffin cups…enjoy!
