This recipe provides numerous health benefits such as being low in sugar, high in fibre, free of gluten & dairy, and yields a soft, tasty muffin that the whole family can enjoy as a nutritious breakfast, or energizing snack. As a bonus, it comes together quickly and has very few ingredients making it simple enough to make on any busy day!
Paleo Berry Muffins
Yield: 10 medium-sized muffins
- 1 medium banana, ripe
- 1/2 cup, frozen or fresh berries
- 2 tablespoons pure maple syrup
- 4 eggs
- 1/2 cup coconut flour
- 1 tsp baking soda
- Optional: shredded coconut for a topping
Preheat the oven to 350 degrees F.
Mash the banana with a fork and mix in the eggs and maple syrup. Stir in the remaining ingredients until well incorporated. Pour the batter evenly into 10 baking cups and bake for 22 minutes or until a toothpick, when inserted, comes out dry.
