Orange & Cranberry Granola Bars

Orange and cranberry season is here! We’re always on the lookout for tasty granola bars that not only pack a nutritional punch, but are also easy to make. These are chewy and soft granola bars with a festive hint of citrus and cranberry. They are vegan, gluten-free, dairy-free and a great school snack for the kids since they’re also nut-free.

 
 

Orange & Cranberry Granola Bars

  • 1 cup of pitted dates
  • 1/2 cup pure orange juice
  • 1 flax egg (1 tbsp of flax meal, or ground flax seeds, mixed with 2 tblsp water – let the mixture sit for 10 minutes before using)
  • 2 cups old-fashioned rolled oats (ensure you purchase ’gluten-free’ oats if you require this recipe to be gluten-free)
  • 1/4 cup virgin coconut oil, melted
  • 1/4 cup real maple syrup
  • 1/2 cup dried cranberries
  • 1/4 cup seeds (such as sunflower or pumpkin seeds)
  • 1/4 cup unsweetened shredded coconut

Soak the dates in orange juice for 30 minutes and place the entire date/orange juice mixture in a blender (or food processor). Blend until smooth. Reserve 1/4 of the mixture for topping.

Preheat the oven to 350 degrees F.

Mix all of the ingredients together by hand until well incorporated. Pour into a parchment-lined 8″x8″ baking dish. Spread the reserved date/orange juice mixture on top. Bake for 25 min. Let cool completely before cutting in. Store in the refrigerator for up to 4-5 days. Enjoy!
