Momma’s Minestrone Soup

mmmm…Momma’s creamy minestrone (…and by ‘momma’, I’m referring to me of course!). This hearty dish gets its creaminess from simmered zucchini, potatoes and kidney beans. Nutritious and delicious!

 
 
 
 
 

Momma’s Minestrone soup


2-3 cloves of garlic
1/2 onion, diced
1 zucchini, sliced
1 carrot, sliced
Saute these ingredients in 2-4 tbsp of olive oil in a large soup pot for about 10 min.

Then add:
1 cup chopped tomatoes (canned or fresh)
1 cup cooked kidney beans
2 small potatoes, diced

Season with:
1 bay leave
1 tsp oregano
salt and pepper

Finally, add: 2 litres of veggie or chicken stock (look for low-sodium varieties or use plain water). Start with 1.5 litres and then add the rest as needed. Let the soup simmer for about 45 min.
