Salad: Let’s get Fresh!

  • Frisée lettuce and mixed baby greens
  • Avocado, cubed
  • Red onions, sliced
  • Asparagus spears, light steamed
  • Boiled eggs
  • Top with pumpkin seeds (pepitas) and fresh cilantro

Dressing:

  • One part basil pesto dressing* (one tablespoon)
  • Two parts fresh lemon juice (two tablespoons)
  • Sea salt to taste

*In a food processor, combine ½-1 clove of garlic, 2 large handfuls of fresh basil, 1-2 tablespoons pine nuts (try toasting briefly on a dry skillet first to intensify the flavour) and stream in extra-virgin olive oil until the perfect consistency is achieved.

Notes: the pine nuts can be omitted, or replaced with walnuts. The basil dressing can be replaced with one tablespoon of extra-virgin olive oil, a handful of freshly torn basil leaves and a little freshly-grated garlic.
