Japanese-inspired Ginger Dressing

 Japanese-inspired Ginger dressing:

  • 1 tbsp grated ginger
  • 1 clove of garlic
  • 1 green onion (or 1 tbsp chopped onion)
  • 2 tbsp raw honey
  • 1/3 cup apple cider vinegar
  • 1/4 cup low sodium soy sauce
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup grated carrot

Place all of  ingredients in a blender and blend well. For a thicker dressing, place in a sealed jar and refrigerate for one hour. Shake well and serve!
