Healthy Zucchini Bread

It’s zucchini season and we are showcasing this gorgeous summer squash.  With healthier ingredients, this favorite summer recipe is packed with fibre and has a nice hint of chocolate to make it decadent and delicious.



Healthy Zucchini Bread

1 large zucchini, grated and strained (approx 1 1/2 cups)
1 1/2 cups spelt flour
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon sea salt
3/4 cup coconut sugar (raw cane sugar works well too)
3 tbsp cocoa powder
1/3 cup virgin coconut oil
1/3 cup unsweetened almond milk
2 large eggs
1/4 cup walnuts, chopped

Preheat oven to 350 degrees F. 

Grate zucchini and strain well. Mix dry ingredients and wet ingredients in separate bowls. Slowly add wet to dry ingredients. Pour into a lightly-greased loaf pan (we love using coconut oil). Top with walnuts and bake for 50-60min.
