Greens & Beans

Greens & Beans

Serves 2-4.

  • 2 tablespoons extra-virgin olive oil
  • 4-5 cloves garlic,halved
  • 1/8 teaspoon crushed chillies (optional)
  • 1 cup tomato purée
  • 2 cups dark leafy greens (chopped kale, spinach, rapini, collard greens)
  • 2 cups canned cannelini beans, rinsed
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper

Heat the olive oil over medium heat and sauté  the garlic and chillies for 30 seconds or until the garlic turns golden and scents the air. Add in the tomato purée and simmer for 5 minutes. Toss in the leafy greens and beans and stir until well coated. Turn the heat down to medium-low and cook for 5-10 minutes. Season with ground pepper and sea salt. Taste and season more if needed.
