Green Beans with Carmelized Onions & Pecans

What a great way to make green beans more exciting for the family! Green beans are high in vitamin C and fibre while the nuts boast healthy fats and minerals making this an excellent side dish and a delicious way to amp up our nutrition.

 
 
 
 

Green Beans with Caramelized Onions & Pecans

Serves 4-6.

  • 1-2 lbs green beans, washed and trimmed (cut about 1/4 inch off of the ends)
  • 2-3 tbsp extra-virgin olive oil
  • 1 medium onion, sliced
  • 1/3 cup pecans
  • 1/2 cup other nuts (more pecans, slivered almonds, walnuts, hazelnuts)
  • About 1/8 teaspoon each of salt and black pepper, to taste

Cook the greens beans in boiling water for 5-7 minutes, until fork tender but still bright green. Strain and set aside. Heat the oil in a medium-sized skillet on medium-low heat and sauté the onions until soft and tender, about 10-15 minutes. Stir often being careful not to let them burn. Add in the nuts and cook for another 5-10 minutes. Add in green beans, season with the salt and pepper and toss until well incorporated. Remove from heat and serve.
