Flourless Chocolate Chip Cookies

This is baking redefined! Full of soft-baked decadence but free of flour, gluten, dairy, refined sugar, and guilt! These high fibre, grain-free and protein-packed cookies are sure to satisfy your sweet tooth and get your energy levels and endorphins surging (without making you fall off the nutritional wagon!).

 

Flourless Chocolate Chip Cookies

  • 2 cups canned chickpeas (rinsed thoroughly)*
  • 1/2 cup almond butter
  • 1/2 cup real maple syrup
  • 1 egg
  • 2-3 tsp vanilla extract
  • 1 tsp baking powder
  • 3/4 cup  dark chocolate chips or chunks of real dark chocolate

*canned chickpeas work best, but if you are using dried chickpeas, the boiling process may make them retain more water than if using canned chickpeas. Ensure the chickpeas are as dry before using them in this recipe.

Preheat the oven at 350degrees F.

Purée all of ingredients, except for the chocolate chips, in a food processor or high-powered blender, until the mixture resembles smooth cookie batter (about 30-60seconds).  Then by hand, mix in the chocolate chips until well incorporated. Drop the batter by the tablespoon onto a greased (or parchment-lined) baking sheet to make approximately 18 cookies.  Convection bake for 12-15 min (until the tops begin to get golden). Let them rest for 15minutes to allow them to cool and firm up.  They can then be transferred to an airtight glass container for storage, or served and enjoyed!
