Creamy Lemon Cod (dairy-free!)

Quick and easy. Delicious and healthy. Turn the busiest dinnertime hour into an exciting Mediterranean fish feast by creating a creamy and lemony sauce.  Just three bold main ingredients makes a healthy coating to liven up any flaky fish. Instead of using cream or butter, this fish sauce is made using tahini, a paste made from toasted ground sesame seeds, which is rich in minerals such as iron, calcium and magnesium.  Not only does this sauce brighten the flavours of the fish, but it boosts its nutrition… and when we thought fish couldn’t get any healthier, it did!

Creamy Lemon Cod (dairy-free!)

Serves 4.

  •  4 4oz pieces of cod fillets, devoted and skinned (other flaky fish can work like haddock, sole or halibut)
  •  1/4 cup tahini
  •  1/2 lemon, juiced
  •  1 garlic clove, pressed or finely chopped
  • 1 tablespoon water (if needed)
  • 1/2 teaspoon sea salt
  • 1 tablespoon extra-virgin olive oil

Preheat oven to 425 degrees F.

Rinse fish and pat dry. In a medium-sized bowl, add tahini, lemon juice and garlic, and stir until smooth. The mixture should resemble a thick pancake batter. If your mixture is too thick add a tablespoon of water to thin out. Season with salt and pepper. Dip the fish fillets into the tahini-lemon mixture and coat the whole piece. Drizzle the olive oil on a glass baking dish. Add the coated fish and bake for 15 minutes, until cooked through (when it flakes easily).
