Sometimes it’s all about the dressing!
Creamy cashew, lime and basil dressing for this kale goddess. Awesome! Raw, dairy-free, easy to make and oh-so healthy.
This basil was the first of my garden treats this summer!
Creamy Vegan Lime & Basil Dressing
- 1/2 cup raw cashews (soaked for a few hours)
- 2 limes (zest and juice)
- A handful of fresh basil
- 5 tablespoons extra-virgin olive oil
- 1 tablespoon red onion
- Sea salt
- Water (about a quarter cup to thin out the dressing).
Throw all of the ingredients in a blender except for the water and blend well. Slowly add water until your desired consistency comes about. Enjoy!
