Chocolate peanut butter cups meet Nanaimo bars – and receive a nutritional upgrade! These chewy vegan, gluten-free squares provide the classic chocolate peanut butter flavours, in a hand-held dessert, and satisfy those deepest sweet cravings we all get. Using real dark chocolate, bananas, whole grain oats, chia seeds and natural peanut butter offers up plenty of antioxidants, fibre and other powerful nutrients in each sweet bite. There’s no guilt in this indulgence!
As this recipe requires no baking, it’s an easy one to get the kids to help with from beginning to end – bonus!
Dark Chocolate and Peanut Butter Squares (no bake)
- 1 ripe banana
- 3/4 c chunky natural peanut butter (or other nut butter)
- 1 cup rolled oats
- 1 tablespoon chia seeds (or flax seeds)
- 1/2 c coconut, shredded and unsweetened
- 1 teaspoon pure vanilla
- 3/4 cup dark chocolate, squares or chips
- 1 teaspoon virgin coconut oil
- Optional: 1-2 tablespoons of unsweetened shredded coconut for topping
Lightly grease an 8×8 baking pan (we love using virgin coconut oil to grease our bake ware). In a large bowl, mash the banana and stir in the peanut butter, oats, chia seeds, coconut and vanilla. Combine well and press into greased pan. In a double boiler, lightly melt dark chocolate and stir in the coconut oil. Pour the melted chocolate over the peanut butter mixture. Top with the optional shredded coconut and refrigerate for 1 hour before cutting into squares.
