As this recipe requires no baking, it’s an easy one to get the kids to help with from beginning to end – bonus!

Dark Chocolate and Peanut Butter Squares (no bake)

  • 1 ripe banana
  • 3/4 c chunky natural peanut butter (or other nut butter)
  • 1 cup rolled oats
  • 1 tablespoon chia seeds (or flax seeds)
  • 1/2 c coconut, shredded and unsweetened
  • 1 teaspoon pure vanilla
  • 3/4 cup dark chocolate, squares or chips
  • 1 teaspoon virgin coconut oil
  • Optional: 1-2 tablespoons of unsweetened shredded coconut for topping

Lightly grease an 8×8 baking pan (we love using virgin coconut oil to grease our bake ware). In a large bowl, mash the banana and stir in the peanut butter, oats, chia seeds, coconut and vanilla. Combine well and press into greased pan. In a double boiler, lightly melt dark chocolate and stir in the coconut oil. Pour the melted chocolate over the peanut butter mixture. Top with the optional shredded coconut and refrigerate for 1 hour before cutting into squares.
