Honestly, I strayed away from making grain-free cookies because many grain-free flours, like almond flour, can be pretty expensive. BUT….today I learned that you can make your own in your food processor or certain blenders. I made almond flour (or almond meal) by milling my own almonds! These chewy chocolatey cookies are absolutely delicious, super easy to make, free of gluten and dairy, and totally kid-approved. It’s baking…redefined!
Chewy Chocolate Chunk Cookies
1 1/3c almond flour (1c whole raw almonds milled in a food processor or magic bullet)
1/2c coconut sugar (or natural cane sugar)
3 tbsp coconut oil, melted
1 tbsp vanilla extract
1 tsp baking powder
Pinch of salt
1/3c dark chocolate chunks or chips
Preheat oven to 350 degrees F.
Place almonds in a food processor and mill until you get a fine powder (but don’t over process or you’ll have almond butter!). Gently mix all ingredients together until well combined. Lined a baking sheet with parchment paper and scoop a heaping tablespoon amount, leaving about an inch between cookies. Bake for 10-12min. Let cool and enjoy! Makes approx 15 cookies.
