Black (Bean) Magic Brownies

Black (Bean) Magic Brownies

  • 2 cups/16oz can of black beans, rinsed
  • 3 eggs
  • 1/2cup organic cane (or other) sugar
  • 2-3 tablespoons of melted virgin coconut oil
  • 1/4 cup cocoa powder, unsweetened
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon vanilla extract
  • a sprinkling or two of cinnamon, optional

Preheat oven to 350 degrees F.

Combine beans, coconut oil and eggs in a blender/food processor for 1-2min until smooth. Add the remaining ingredients and blend for another 1-2min. Use some coconut oil to lightly grease an 8×8 pan. Pour the batter into the pan and convection bake for 25-30 min until the edges start to pull away from the sides (it will need longer if not using a convection oven). Let cool for 10-15minutes before cutting into squares…enjoy!
