Dips are the best way to enjoy ton a of raw fresh veggies. And not all dips are created equally! This bean dip is fresh, packed with fibre and raw nutrients and the best part? It is super quick to whip up.
Black Bean Dip
1c cooked (or canned) kidney or black beans, rinsed
1 lime, juiced
1 clove garlic
1/4 c olive oil
1/8 tsp cumin
A handful of fresh chopped flat parsley or cilantro.
Blend ingredients, except fresh herbs, until smooth. Stir in fresh herbs by hand. Serve with raw veggies or whole grain crackers or crostini. Enjoy!
