Eat your rainbows – Sweet potato and black bean burgers for dinner tonight! These veggie burgers were an easy and healthy mix of black beans, sweet potato, quinoa, corn, fresh herbs and spices.
Black Bean and Sweet Potato Burgers
In a bowl mix:
- 1 medium cooked sweet potato
- 3/4 c cooked quinoa
- 1 cup cooked black beans
- 1/2 c cooked corn niblets
- 1 egg
- A large handful of fresh parsley or cilantro
Season with 1/2 tsp chipotle powder and salt and pepper. Form the mixture into burgers and pan fry in some olive oil.
Serve on a whole grain bun with your favourite toppings. Enjoy!
