Chunky Monkey Oatmeal Bars

Reminiscent of a favourite ice cream flavour from childhood, these chunky monkeys  are moist, naturally sweetened and nutritious for the whole family. These oatmeal bars are high in fibre and the added nuts and flax seeds makes them a great source of protein and healthy fats. These bars are dairy-free and wheat-free and they make a helpful quick breakfast or snack option especially on those busy non-stop days.

 

 

Chunky Monkey Oatmeal Bars

  • 2 ripe small bananas
  • 1 egg, whisked
  • 1/2 cup almond butter
  • 1/4 raw honey
  • 3 cups rolled oats (use ‘gluten-free’ oats to make these gluten-free)
  • 1/4 cup flax seeds
  • 1/2 cup chopped walnuts
  • 1/3 cup dairy-free dark chocolate chips (at least 70% cacao)

Preheat oven to 350 F and lightly grease an 8×8 pan (we like to use coconut oil to grease our bake ware).

Mash the bananas and stir in the egg, almond butter and honey until well combined. Add in the remaining ingredients and coat well. Press firmly into pan and bake for 13-15min. Let cool before cutting into bars or squares (about 2′ x 2′ in size). Refrigerate for up to a week. Enjoy!

Tip: cut into squares, wrap and refrigerate for easy on-the-go snacks or breakfasts.
